A little something tasty: Oat & Chocolate muffins and Chicken "Empenadas"

This week (Monday to Friday) I was actually adhering to a fairly healthy eating and exercising plan, I mean I only worked out three times but it wasn't horrible by any means. However, since I had been so "good" not eating dessert while watching my routine evening comedies, I decided I would have something tasty on Friday night. I decided to make some oat and chocolate chip muffins (I'll attach a picture below). Of course I could not control my ravenous sugar yearning taste buds and over the weekend ate 7.5 (at least they were homemade, and not Costco size). To make matters worse, today I decided to make little chicken pies from last nights leftover grilled chicken, not exactly great for my plan to get back on track tomorrow. But anyways, the chicken pies turned out pretty good, though I might force my parents to eat them so I can just stick to my quinoa/chicken/veggie lunches next week. Honestly though I should just enjoy the freaking pies, I doubt a few days of not being perfect will have a major impact. So if you learn anything from this babbling post I suggest you just eat something delicious and don't regret it #yolo, it is the beginning of December after all...

I actually substituted 2 tbsp of oil and half a cup of applesauce instead of butter for these muffins and they turned out yummy!
 My mom's $14 sea salt...I guess it's supposed to be healthy (hhmmmm...). I also used coconut oil in lie of butter in the dough to try to make it a bit more health conscious...

 For the filling I just mixed a random assortment of goods: grilled chicken, peas, garbanzo beans, cheese and seasoning.
 Just put the filling in the center, wet the edges of the circle with water, fold and press with a fork.
